Today’s #BakeItForward celebrity supporter is Meghan Markle. Meghan is an American TV and film actress best known for her role as Rachel Zane on the USA hit series “Suits.” Meghan recently launched The TIG, a lifestyle website celebrating food, travel, and fashion and reshaping the idea of “beauty.” Prior to her acting career, Meghan worked for the U.S. Embassy in Buenos Aires. The Northwestern University graduate continues to work closely with UN Women on social issues and will be traveling on a USO tour this winter to thank the troops for their service.
“I love baking that lets you play and experiment, the less precise stuff is right up my alley!” she said. “That’s how I came up with The TIG Ginger Berry Crumble—it has a relatively healthy bent and a great kick of fresh ginger. Using coconut oil instead of butter, adding some flax seeds, and using maple syrup instead of sugar makes this an indulgence you can happily have a second serving of—especially at the holidays.”
“A few seasons ago, I wanted to make sure the leftovers from “Suits” were going to neighboring homeless shelters and soup kitchens, including the one I volunteer at,” she said. “It was a long process of outreach and logistics, but one of the solutions to this was Second Harvest. This organization helps to facilitate the deliveries and see the vision through.”
